World-class celebrity chefs offer a variety of global traditions and diverse culinary interests that are reflected in the cuisine, and they are continually adding inspired new signature dishes to Holland America menus that will prove to be a highlight of your cruise.
Guests can explore a range of delicious onboard dining options; everything from a burger and fries by the Lido Pool, to the Pan-Asian flavors of Tamarind, to the ultimate in refined and luxurious dining at the Pinnacle Grill.

1. As You Wish® Dining
Flexibility is the hallmark of Holland America Line’s As You Wish® dining program. In the main Dining Room, it’s your choice of a traditional pre-set seating and dining time or a flexible open schedule.
One level of the two-tiered restaurant offers a flexible/open dining service from 5:15 to 9 p.m. daily, and the other hosts two seatings, an early seating at 5:45 p.m. and main seating at 8 p.m. Pre-set dining times are subject to change based on itinerary. Guests who select flexible open seating may make reservations daily during a cruise up to 4 p.m. or simply walk up anytime during dining hours.

With the collective experience, passion and creativity of world-class celebrity chefs, the Holland America Line Culinary Council® brings global influence and expertise to dining venues across Holland America. Rudi Sodamin

Canaletto

Tamarind
